Mahlepi is a Greek spice made from the ground stone of the St Lucie cherry. Once the stone is cracked to release the kernel, it is ground into a white, sandy-coloured powder used in baked goods, particularly in Middle-Eastern and Greek cooking. It particularly enhances egg-based yeast cakes.
It is used in our own traditional baking of tsourekia and flaounes.
